Wikis use a simple markup language called wikitext. It's simpler than HTML and allows for quick editing, or find-and-replacing. If you're less interested in learning wikitext, OpenOffice has support for text document export to wikitext and it'll do tables properly as well.
Here's a quick guide to making pretty sortable tables like this one on this site.
